Salsa Chicken Breast
This is a good busy day meal, easy and fast! I have used it as company fare, too.

INGREDIENTS
- 1 package thin sliced chicken breast
- 1 jar (16 oz.) thick and chunky salsa
- 1 small green pepper
- 2-3 Tbsp. cooking oil
INSTRUCTIONS
Cut chicken into bite size pieces.
Cut green pepper into small slices, being careful to remove seeds and pith.
Heat small amount of cooking oil in non-stick pan and sauté chicken until no longer pink. Remove from pan and keep warm. Clean pan, add additional oil, allow to heat and add sliced green peppers. Cook until crisp tender. Add salsa (may not need entire jar) and allow to heat through. Add the precooked chicken to the vegetables and allow to heat through. Serve on rice.
