Sheri's Corn Relish Salad
Recipe from Sheri Dressel.
INGREDIENTS
- 2 15 oz. can Le Sear peas
- 2 14½ oz. can French style green beans
- 2 11 oz. can shoe peg corn
- 1 large jar pimento
- 1 cup chopped celery
- 1 cup chopped red onion
- 1 green pepper, chopped
- ½ cup oil
- ¾ cup vinegar
- 1 cup sugar
- 1 Tbsp. water
- 1 tsp. pepper
- 1 tsp. salt
INSTRUCTIONS
Drain the cans of peas, green beans, corn and pimento. Chop the pimento. Add these ingredients to celery, red onion and green pepper in a large bowl and mix well.
Mix together the oil and next 5 ingredients. Pour over vegetables and mix together. Marinate 24 hours. Drain and serve.
