Smothered Lentils
This would be an excellent meatless meal. Just omit the meat and use either chicken or beef stock . A little umph in the spices, maybe some thyme would be good too. I served with fresh rolls and salad. Wyatt even said “Mom, this is really good.” High praise from someone who typically doesn’t like healthy meals.

INGREDIENTS
- 2 cups dry lentils, rinsed and sorted
- 1 medium onion, chopped
- ½ cup chopped celery
- 2 garlic cloves, minced
- 1 cup chopped ham, cooked and chopped (you can use kielbasa, or another sausage or no meat at all)
- ½ cup chopped carrots
- 1 cup diced tomatoes (I used 1 (15oz) can diced tomatoes with juice)
- 1 teaspoon dried marjoram
- 1 teaspoon ground coriander
- salt and pepper to taste
- 3 cups water (I used beef stock)
INSTRUCTIONS
Combine all ingredients in slow cooker.
Cover and cook on low 8 hours. (Check lentils after 5 hours of cooking. If they’ve absorbed all the water, stir in 1 more cup of water or stock.)
