Sour Cream Raisin Pie

INGREDIENTS

  • 1 cup sugar
  • 1½ tablespoon cornstarch
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • salt
  • 1½ cup sour cream

  • 3 eggs, separated
  • 1½ cups raisins
  • 1½ tablespoons lemon juice
  • ¼ teaspoon cream of tarter
  • 6 tablespoons sugar
  • ½ teaspoon vanilla

  • Baked 9” shell


INSTRUCTIONS

Combine 1 cup sugar, cornstarch, cinnamon, nutmeg and salt in 3 quart saucepan.  Blend in sour cream. 

Beat egg yolks lightly.  Stir yolks, raisins and lemon juice into saucepan.  Cook over medium heat, stirring frequently, until boiling.  Cook 1 minute more.  Remove from heat and let cool while preparing meringue.

Beat egg whites and cream of tartar until foamy.  Gradually add 6 tablespoons of sugar one tablespoon at a time, beating well after each addition.  Continue beating until stiff, glossy peaks form.  Beat in vanilla.

Pour slightly cooled raisin mixture into shell.  Cover with meringue.

Bake in 400° for 10 minutes.
