Southwest Baked Beans

The spiciness factor can be kicked up (or down) by adjusting the chili powder and adding hot sauce.

INGREDIENTS

  • 1 Tbps vegetable oil
  • 5 oz Canadian bacon, cut into ½-inch pieces
  • 2 cups chopped onions

  • 2 8-oz cans tomato sauce
  • 1 cup packed light brown sugar
  • 6 Tbsp apple cider vinegar
  • 3 Tbsp light molasses
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp chili power (or to taste)

  • 1 15-oz can garbanzo beans (chickpeas), drained and rinsed
  • 1 15-oz can kidney beans, drained and rinsed
  • 1 15-oz can black beans, drained and rinsed
  • 1 15-oz can butter beans, drained and rinsed

INSTRUCTIONS

Preheat oven to 375°F. Heat oil in heavy large ovenproof pot over medium-high heat. Add bacon and onions; sauté until brown, about 10 minutes.

Mix in tomato sauce and next 6 ingredients. Add all beans.

Cover pot; transfer to oven and bake until mixture thickens, stirring occasionally, about an hour and a half.
