Those Potatoes
Powderhorn Potatoes from the Créme de Colorado cookbook.

INGREDIENTS
- 5 lbs. Yukon Gold potatoes
- ½ cup butter, melted
- 8 oz. mild Cheddar cheese, shredded
- 2 Tbsp. chopped green onion tops or chives
- 2 cups sour cream
- salt and freshly ground black pepper to taste
INSTRUCTIONS
Bake potatoes in skins at 400° for 40 minutes or until slightly firm. Cool overnight. Peel and grate potatoes.
Mix together butter, cheese, onion, sour cream, salt and pepper, and stir into potatoes. Pour mixture into lightly greased 2½ quart casserole and bake at 350° for 30-40 minutes or until lightly browned.
8-10 servings.
