Tina's Swordfish Kabobs
Excellent marinade recipe from Tina Silberman.
INGREDIENTS
- 2 Tbsp. chopped fresh rosemary
- 3 Tbsp. low sodium soy
- 1½ Tbsp. olive oil
- 1 Tbsp. grated lemon rind
- 2 Tbsp. fresh lemon juice
- 2 tsp. grated orange rind
- 1 Tbsp. fresh orange juice
- 1 tsp. grated fresh ginger
- ½ tsp. salt
- ¼ tsp pepper
- 5 garlic cloves, chopped
- 1½ lb. swordfish
INSTRUCTIONS
Put all the ingredients in a ziplock bag with swordfish pieces in refigerator for 30 minutes.
I add onion and pepper pieces to swordfish kababs before grilling.
