Tortellini Soup
Laura got this recipe from Dee Fink. Simple and delicious. We made this over Christmas 2013, pretty red and green.

INGREDIENTS
- 1 medium onion, diced
- 2-3 cloves garlic, minced
- 1-2 T. butter
- quart of chicken broth
- 15 oz can fire-roasted tomatoes
- 10 oz baby spinach
- 9 oz cheese tortellini
INSTRUCTIONS
Melt butter in large sauce pan or stock pot. Saute onions and garlic in butter.
Add chicken broth and tomatoes and bring to a simmer. Add spinach and tortellini and simmer about 10-15 minutes until tortellini is cooked.
