Tortilla Soup
A quick and delicious family favorite.

INGREDIENTS
- 2 (14 1/2 oz) cans chicken broth
- 1 (14 1/2 oz) can stewed tomatoes
- 1 Tbsp. fresh lemon juice
- 3 garlic cloves, pressed or minced
- 2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. pepper, salt
- 1 1/2 cups chopped cooked chicken
- 1 cup frozen corn kernels
- 1 (15 oz.) can black beans, rinsed and drained
- 2 Tbsp. half-and-half
- 1 green onion, thinly sliced
- tortilla chips
- 1 cup (4 oz.) shredded Mexican four-cheese blend
- sliced green onions
INSTRUCTIONS
Bring first 7 ingredients to a boil. Reduce heat; add chicken and next 4 ingredients, and simmer 20 minutes. Serve with tortilla chips, cheese and green onions.
