Whoopie Pies

The recipe above for the cookie is the original recipe I have used since I was first married.  Readers sent in recipes to a radio show, which, in turn, sent out a pamphlet of recipes.  Whoopie Pies was one of them.  It is an old Maine recipe which became very popular in our state.  The filling varied but it was usually a fluffy white frosting.

Kelly established a family tradition of having Whoopie Pies when we visited “bouncy-rock beach” at Schoodic Point.


INGREDIENTS

  • 1 cup sugar
  • ⅔ cup shortening
  • 2 eggs
  • 1 cup milk
  • 2 teaspoon vanilla
  • 2½ cups flour
  • ½ cup cocoa
  • 1¼ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 1 teaspoon salt


Filling:

  • 2 egg whites
  • 2 cups confectioners’ sugar
  • ½ cup shortening
  • 1 teaspoon vanilla

INSTRUCTIONS

Cream together sugar and shortening.  Add eggs.  Sift dry ingredients and add alternately with milk and vanilla to sugar, etc.  Beat until smooth.  Drop by spoonful on greased pan.  Bake at 350° F for 10-15 minutes.

To make the filling, beat the egg whites until they are fluffy, gradually adding one cup of confectioners’ sugar.  Then spoonful by spoonful add the shortening and the rest of the sugar to the egg white mixture until it is smooth and fluffy then beat in the vanilla. 

When the cookies are cool enough to handle, make pairs of similarly sized one and spread the filling on one half and top with the other half.  Wrap in plastic wrap or put into an airtight container.
